Arizona is famous for its epic sunrises and sunsets. A few nights ago, Alan and I were lucky enough to see the most awe-inspiring sunset. Hues of pink and gold danced across the sky and in the middle a Phoenix rose out of the sun’s dying rays. The sight took your breath away.

The other night, I attempted to cook stuffed peppers. Unfortunately, upon checking my Betty Crocker Cookbook, I realized the only matching ingredient I had was bell peppers. Never one to back down from a challenge, I decided to make the stuffed peppers with the ingredients I had in my kitchen.
